Review of What's Cooking : Low Fat (What's Cooking Series) (Hardcover)

This is one of my favorite cookbooks! Every recipe I've tried is fabulous and I've made some of them so often that I have them memorized.I really love the Pan-cooked Pork Medallions w/ Apples & Cider, Strawberry Roulade, Red Roast Pork w/ Bell Peppers (on the cover) and the Broiled Chicken w/ Lemon & Honey. The Red Fruits w/ Foaming Sauce is very simple to make and very impressive to dinner guests.
The recipes are simple and use ingredients that you can find at any grocery store. Most recipes are no more than 5 or 6 steps and include color photos of some of the steps--how to cut the meat, folding in ingredients, etc. I love this because I'm a visual person and I like to see what I need to do instead of just reading about it.
There is also a beautiful, full-page, color picture of the final product FOR EACH RECIPE!This is wonderful because you have an idea of what the finished product should look like and how you can present it. I highly recommend this cookbook! It proves that low fat does not mean no taste or flavor!

Review of Busy People's Low-Fat Cookbook (Spiral-bound)

I bought this cookbook about a week and 1/2 ago.I have cooked out of it nonstop (breakfast, lunch and dinner) since I received it.If you are looking to eat low fat and not give up taste, and not spend a lot of time in the kitchen, this book is it!!!!The recipes are super easy (all 30 minutes or less, and 7 ingredients or less), and all very low fat and good!My family hasn't been disappointed yet.I recommend the pineapple snack cake, it takes 2 minutes to make, 20 minutes to bake and tastes just like pineapple upside down cake with only 1 gram of fat!!!! Try this book, it is worth it!

Review of 1,001 Low-Fat Desserts (Paperback)

Anyone who enjoys desserts but is concerned with fat intake should buy this book. The recipes are varied, ranging from classics to new inventions.The difficulty levels also vary, so it is easy to choose a quick and simplerecipe when in a hurry. This is a good reference that will be used for manyyears. Results are predictable and the taste is satisfactory.
However,one cannot expect these recipes to produce the sinfully rich and delicioustaste of high fat recipes. After all, fat adds the flavor! So, the butterand sugar recipes will still remain number 1 in my heart.

Review of Fabulous Lo-Carb Cuisine (Paperback)

This is my favorite low carb recipe book.No crunch up pork rinds to pretend they are something else; real food without exotic ingredients requiring a trip to health food store.Two favorite recipes:Lasagna stuffed peppers and Strawberry Custard tarts.All the desserts do NOT consist of let's leave the crust off the pie and make a sugar free pudding filling.
I owe the friend who recommended big time (as a slim book I originally wasn't going to buy -- but more than a dozen recipes you'll actually make and use are worth more than a book of 300 you won't).

Review of Chocolate and the Art of Low-Fat Desserts (Hardcover)

My brother lost my copy, and I am so aggravated! The recipes in this book were (except for one mistake in the lemon squares; leave the flour OUT of the lemon filling folks, and either halve the crust recipe or double thefilling recipe. Do that and they are great) The beauty of these recipes isthat they work so well without cream. One of the dirty secrets aboutrestaurants is how much cream and butter they use; they do it because ITINCREASES SHELF LIFE. If a dessert is made of cream, it will keep for agood while. Alice M. is careful (bless her!) to note how long a dessertwill last, frozen or refrigerated or in a cookie can. If you are going tomake a dessert, you seldom keep it for the lengthy time most restaurantsdo. A mousse made with egg white is not only better for you, but you willnotice (next time you eat a cream-filled mousse) the fuller chocolateflavor. Cream crowds the delicate chocolate taste right off your tongue.You may not be able to keep Alice's lemon curd more than a few days, but itis so good it won't last that long anyway. Now I'm going to go over to hishouse and turn it over and shake it until I find my copy again.

Review of Low-Fat Soul (Paperback)

When I reached my thirties and had to start watching my weight, I despaired that I would have to give up the Southern cooking so dear to my heart. Jonell Nash, in "Low-Fat Soul," proved to me that all goodrecipes from down South do not need to start with the words "Firsttake two tablespoons of bacon grease..." I have prepared almost halfof the recipes in this book and can honestly say that not only are theygood but have now become some of my household's favorites. They range fromsimple to prepare dishes like Daddy's Chicken Spaghetti or SmotheredCabbage to "company" dishes like Baked Stuffed Red Snapper (whichis also easy to prepare but don't tell that to your guests, just let themooh and aah.) In addition to those mentioned above, three of my personalfavorites are the Buffalo Chicken Roll-Ups,the Peanutty Noodles and theCollards with Sun-Dried Tomatoes. Each recipe comes with some comment byMs.Nash and every section begins with helpfuls hints on ways to cut down onfat and calories. This book is for every Southerner (current or expatriate)who wants to eat healthy and keep their weight down.

Review of Eat Yourself Thin Like I Did!: Quick and Easy Low Carb Cookbook (Paperback)

I was disappointed, after reading all the 5-star reviews, to discover that these recipes are full of Dr. Atkins Bake Mix and Sugar Twin (both of which I find inedible), and crushed pork rinds (which she uses frequently as a seasoning and filler).There is a nasty-sounding recipe for Sweet and Sour Chicken that's made with Sugar Twin -- aren't there enough low- or no-carb ways to prepare chicken without resorting to this?If you want natural-tasting recipes made with "real" food, or if you don't eat pork products, this is not the book you're looking for.

This book is great if you love Southern cooking without the high carbs in your diet. The recipes are very simple to read and prepare. Buying and using this cookbook will keep you thin and will impress your friends and family.

Review of The Gourmet Prescription: High Flavor Recipes for Lower Carbohydrate Diets (Hardcover)

This is a very nice book. I bought this book (The Gourmet Prescription) along with another book by F. McCullough.This book by D. Chud, "The Gourmet Prescription" presenting very unique approaches (especiallyhome smoking) to improving flavor in low-carb, low fat dishes. The recipesare unique and probably not found elsewhere.However, I probably would use this book for "special occasions", not everyday use. Many ofthe recipes are longer, require more ingredients, and/or require that theyou have prepared special condiments and sauces (the book tells you how toprepare these condiments, usually using the smoker).Now doubt the recipesare high in flavor, and very unique (i.e. you aren't going to findtechniques like these in other books).The downside is that the recipesare time-consuming (considering you have to prepare the condiments ahead oftime). The pictures are beautiful --its definitely gourmet(many ingredientsmight be hard to find for those not living in urban centers).I also don'tknow if kids would like this kind of food if they aren't used it eating"gourmet restaurent" type food.I found the McCullough book tobe more practical and down-to-earth. Another book I like very much for lowcarb people is "The Complete Meat Cookbook" by Bruce Aidells andDenis Kelly which tells you everything you want to know about selecting andpurchasing the best in beef, pork,lamb and veal for easy to prepare dishes,both classic expensive cuts (how to get the best out of an expensive cuts)as well as how to make tender dishes out of the cheaper cuts.Since theAidells book isn't particularly oriented to low-carb, some of the sidedishes are high carb.All three boooks have a place on my bookshelf, sincethere are occasions when I'll want to prepare a special meal using the highflavor techniques described in this book, "The GourmetPrescription".

Review of Lauri's Low-Carb Cookbook: Rapid Weight Loss with Satisfying Meals! (2nd Edition) (Paperback)

Without going into too many details, let me just say that THIS COOKBOOK is the only reason my wife and I are still on the Atkins diet. We bought four cookbooks (all highly recommended), only to find that, while providingtasty recipes, three of the cookbooks asked for all manner of"fancy" ingredients. Stuff not normally found in our"average" kitchen. Expensive stuff. And many of the recipesweren't quite as low-carb as we had hoped (20g for one serving?).
Lauri'scookbook took care of those problems. I think the only "fancy"ingredients we had problems with were Kitchen Bouquet (it was in the gravysection at the store) and shallots (never had one before). The rest is justplain, everyday ingredients. And low-carb? All of her recipes list thenutritional information right there. It's nice to eat a large, tasty dinnerwith only 2.3g per serving! Most of the recipes are below 10g, and many arebelow 5g. Serving size is very generous.
I consider this book to be thebest diet/way-of-eating investment I've made so far. This cookbook is justtoo good to pass up.
